Chocolate Coconut Protein Balls Updated 1/30/24
These delicious coconut chocolate protein balls are full of healthy fat and a boost of protein. They are gluten-free, vegan, and sugar-free. Perfect for food emergencies or as a treat. Inspiration is thanks to @CotterCrunch.Com. She has lots of yummy recipes. The real difference is mine is less laborious. I took the easy way out!
Ingredients
- ⅓ cup organic ground flax seed 
- 2 tbsp unsweetened cacao powder you can sub cocoa powder 
- 4 tbsp creamy organic almond butter or other nut butter. You can also use sunflower seed butter or tahini 
- 3 to 4 dates (optional) 
- 2 servings of high-quality chocolate protein powder. I like Be Well by Kelly or Truvani 
- 1 tbsp organic coconut oil solidified 
- 2 tbsp unsweetened organic shredded coconut 
- ¼ cup water. Adjust as needed 
- 2 tbsp unsweetened chocolate chips chopped. I used Hu 60% dark chocolate chips (optional) - 1. In a food processor process the flax seed and cacao powder until well combined. - 2. Add nut butter, protein powder, shredded coconut, dates if using, and coconut oil and process until smooth adding water a little at a time until well incorporated. If the batter isn’t smooth add a little more water. If it gets creamy before you add all of the water you can stop there. - 3. Stir in chocolate chips if using. Refrigerate for 20 minutes for best results. If you don’t have time go ahead and roll into balls. I got 13 protein balls. You may get one or two more or less. - 4. Roll them in more shredded coconut if you like. 
Store in an airtight container in the refrigerator.
