Turkey Taco Bowls

Want an easy recipe you can make ahead and put together in a jiffy? Try these delicious budget-friendly beef or turkey taco bowls. Inspired by Danielle Walker’s Beef Tacos, “Against All Grain”

Cook ground turkey or beef with veggies and seasoning, and cool. Store in a glass dish in the refrigerator for up to 5 days. Wash and chop veggies that you would like to add to your bowls like jalapenos, romain lettuce, green onions, and herbs, and store them in the refrigerator. Cook rice or quinoa in an Instapot and store it in the refrigerator.

Use cooked taco turkey or beef to make bowls and tacos, or add scrambled eggs for a quick breakfast, lunch, or dinner.

Ingredients

1.5 pounds of organic ground turkey. I like Organic Fulton Valley Farms from Costco

2 tbsp taco seasoning (recipe and store-bought suggestions below)

1/2 yellow onion

2 cloves of garlic

1/3 cup water

1 cup diced tomatoes lightly drained

Serve With any of all of the following:

organic rice

organic quinoa

chopped romaine lettuce (or lettuce of choice)

Bitchin Sauce

warmed beans of choice

salsa

avocado sliced

thinly sliced jalapeno

squeeze of lime

grated cheese

chopped tomatoes

chopped cilantro

diced green onions or red onion

guacamole

chopped cucumber

Taco Seasoning

1 tablespoon chili powder

1 1/2 tsp ground cumin

1 tsp Himalayan salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1 1/2 tsp dried oregano

1/4 tsp onion powder

1/4 tsp garlic powder

1/2 tsp red pepper flakes

Combine all ingredients and store in a jar.

Make it easier with store-bought taco seasoning.

Directions

Heat a sauté skillet of medium heat.

Brown ground turkey or beef, onion, and garlic until meat is cooked, about 7 to 10 minutes. Add remaining ingredients and simmer for 10 minutes.

Add cooked rice or quinoa to a bowl and top it with meat, salsa, and Bitchin Sauce. Then add tomatoes, cucumber, romaine lettuce, cilantro, sliced jalapeño, grated cheese, a dab of yogurt, and a squeeze of lime.
